Nach 10 Tagen beginnt sich der sogenannte Edelschimmel zu bilden, der dem Wein seinen charakteristischen Geschmack verleiht. Die Ernte erfolgt manuell in Kisten, und die Trauben werden mit einer kleinen Trichterpresse gekeltert. Der Most fermentiert etwa 15 Tage lang in einem temperaturgesteuerten Tank bei 12 °C und ruht anschließend für etwa 4 Monate in einem kleinen Tank mit seinen eigenen Hefen, wobei tägliches Bâtonnage durchgeführt wird, um die Hefen in Schwebe zu halten. Danach wird er für weitere 2 Monate natürlich geklärt, sodass sich der feste Teil am Boden absetzt und der klare Most abgefüllt wird. Anschließend ruht der Wein für ein Jahr in der Flasche. Aus 100 kg Trauben werden 18 Liter Passito-Wein gewonnen.

And because it's bigger sized glitter, it's a lot easier to see when it gets all over everything like clothes, furniture, spouses and children. If the shimmering glitter in this was just smaller and softer, I would love this for summer time to use on my legs and arms. But it's unfortunately just not my favorite and I don't think I'll be using it anymore.
