Beschreibung

Bio natives Olivenöl extra aus begrenzter Produktion und ausschließlich aus Hojiblanca Oliven hergestellt. Diese Oliven werden in einem frühen Reifestadium (envero) auf der Finca des Unternehmens „El Vicario“ geerntet, wobei 60-70% der Oliven noch grün sind. Dadurch entsteht ein fruchtiges Olivenöl mit vielen Antioxidantien.

Die Olivenhaine, in denen diese Oliven wachsen, sind zwischen 20 und 30 Jahre alt und werden mit Tropfbewässerung gepflegt.

Verostungsnoten

In der Nase zeigt sich ein kraftvolles, frisches Aroma mit Noten von Tomaten, grünem Apfel und Banane. Feine Nuancen von schwarzem Pfeffer, Salbei, Minze und Basilikum runden das Bouquet harmonisch ab.

Am Gaumen entfalten sich klare pflanzliche Noten von Salat und Mandeln. Die Schärfe ist präsenter als die Bitterkeit, setzt etwas später ein und wirkt angenehm zurückhaltend. Insgesamt präsentiert sich das Öl mit einem ausgewogenen, eleganten Spiel zwischen Schärfe und Bitterkeit.

Salaten, Frischkäse, Fleischsoßen, kalten Suppen wie Salmorejo oder Gazpacho. Ein vielseitiger Begleiter in der mediterranen Küche.
