WEINBEREITUNG

Traubenlese: Die Trauben, die sorgfältig während der Lese ausgewählt werden, werden in speziellen Lagern auf Holzgittern natürlich getrocknet und verlieren von 35% bis zu 40% des Gesamtgewichts. (Trocknung dauert circa 60 Tage)

Weinbereitung: Weiche Pressung Anfang Januar, Weinbereitung mit eingetauchtem Trester-Verfahren, mit täglicher Remontage bei kontrollierter Temperatur (20-22°C)

Dauer der Mazeration: ca. 25 Tage

Reifung: 24 Monate, davon 12 in neuem Barrique, die restlichen im Barrique zweiter oder dritter Nutzung, zuletzt reift nochmal alles zusammen für 12 Monate vor der Abfüllung. Sterile Abfüllung, mit Verschluss

Verfeinerung in der Flasche: ca. 6 Monate

Farbe: Intensives Violett-Rot

Bukett: Schmeichelhafte Düfte von Waldbeeren, getrocknete rote Früchte mit Endnoten von Lakritz und Kakao
