After becoming head of his family's small estate, in the Aube region of southern Champagne, Jérôme Coessens has been producing his own wine since 2006. Here, at his winery in the village of Ville-sur-Arce, he makes small amounts of several cuvées, all from a 2.25-hectare parcel (about 5.5 acres) called Largillier. While Largillier is part of a larger vineyard, he considers this section the best terroir for his own cuvées. It is composed of Kimmeridgian soils, which are calcareous clay soils with abundant limestone. Largillier, on a south- and southeast-facing slope, is planted exclusively to Pinot Noir.

Within Largillier, Jérôme designates four parcels—commonly referred to as Fruit, Flower, Substance, and Mineral—and each ranges from chalky soils to those richer in clay. He vinifies each separately, using fruit only from vines that are at least 30 years old. Except for “Les Sens Boisés,” there is little to no oak used on the Coessens wines. The cuvées are an expression of purity, place, and vintage. 

The fruit for this wine comes from two plots: Fruit and Flower. The wines are vinified separately and then blended in April or May.
