For their artichokes, I Contadini have carefully selected the Violet Brindisi ones, a crisp Apulian artichoke variety. The Brindisi Violet is a very special type of artichoke. Its main feature is its crisp crunch, and the challenge is to preserve it in the finished product without using artificial preservatives. Its name comes from the particular purple color it turns as it ripens. Thanks to the round, full, and unmistakable flavor, the Violet is perfect with a whole variety of hot and cold dishes, while keeping its own sensory qualities unchanged.
These artichokes are not grown in nurseries and are cultivated by taking plants from already existing orchards. The cultivation of these artichokes takes place from October and the harvest begins in March. Within 8 hours from the harvest, the artichokes are defoliated, manually cleaned with a paring knife and immediately placed in extra virgin olive oil without adding any condiment or spice, to maximize the unique taste of this product. The whole process, from harvesting to preparation and to putting them into jars is carried out by hand, to dedicate the utmost care to the artichoke. Tender but crunchy, these artichokes can be used to enrich appetizers, cold rice, Mediterranean vegetables and pizza, as well as stir-fried to enrich hot dishes.
About I Contadini
I Contadini are located in Ugento, in the Salento area of Puglia. Edoardo, Emanuele and Gianna are the three Trentin siblings who grow, harvest, transform and prepare lots of vegetables, according to the strong traditions that are deeply rooted in the area. A childhood spent in the sunlit fields, where their grandpa Fiumano grew capers. Three very different siblings, united by a big dream. They have love for the land in their blood; they get up when it’s still dark, following nature’s rhythms, the seasons, and without ever losing their smile - an element that is as essential as water. Fresh and healthy are words that have true meaning for them: hard work, respect for people and nature, a love for simplicity and wholesomeness. Colors, flavors, and the intense emotions of those who know how to wait and who cultivate hope and passion.
Ingredients: artichokes (65%), sunflower oil, extra virgin olive oil, apple cider vinegar, whole salt, lemon juice.
Storage: store in a cool, dry place away from light and direct heat. After opening, store in the refrigerator and consume within 7 days.
