During this time, the vinegar slowly develops its rich and complex flavours, intensifying with each year of maturation. The term "high density" refers to the viscosity and concentration of the vinegar. After 8 years of ageing, the vinegar achieves a thick, syrupy consistency with a balanced sweetness and acidity.
