WINEMAKING
The fruit was harvested in the cool hours of early morning. Upon arrival at the winery, it was delicately crushed into static fermenters and inoculated with cultured yeast. Pumpovers were performed twice daily for aeration and extraction of color, flavor, and tannins. After fermentation, the wine was racked into French oak barriques and allowed to mature gracefully until September 2023. The wine was then blended into a tank and allowed to settle before undergoing a light fining and filtration for bottling.
