Subtle herbaceous and floral notes are also perceived. In the mouth it is very fresh, with a very integrated acidity, with body and volume enhanced by the work done with its lees. Long, enveloping, aromatic and very persistent finish.
Marqués de Riscal is a txakoli that is made from Hondarrabi Zuri grapes, grown on the Upaingoa estate of the Oipati Guipuzcoan municipality. The farm is located in the Oñati Valley, at the foot of Mount Aloña, in the Alto Deba region, 60 km from the sea and 250 m high. This Txakoli expresses the character of the area with a temperate Atlantic climate.
To make this txakoli, the best plot of Hondarrabi Zuri was selected from the farm planted in 2007 and cultivated by the trellis system. The crushed harvest was gently pressed and a static cold racking was carried out at 8º to 10º C. Slow fermentation at a controlled temperature between 17º-19º C. At the end of the alcoholic fermentation for 6 months, a rearing is carried out with its lees in storage. It has not been clarified or stabilized, it has only been filtered before bottling. The winter was cold and the spring very rainy, which made flowering and fruit set complicated, being this at the beginning of June. The summer was quite hot and dry, which helped a good ripening causing less grape than usual. The harvest began on October 11.
