A complex nose with varietal definition showcasing dark bramble fruits, red currants and dark mint chocolate. The palate shows seamless style, substance, vibrancy, generosity, and true Cabernet Sauvignon varietal flavour. The Oak layers support the fruit while fine, long tannins provide structure and exceptional length.
The historic 'Ingleburne' homestead marks the spot for Penny's Hill Estate located at the heart of McLaren Vale. Since 1988, the family owned winery has sourced fruit from its estate-grown vineyards and is renowned for producing exceptional wines from premium vineyards.
Planted in 1993 with clone SA125 on a five acre-site bordered by thick revegetated bush, Penny's Hill Cabernet Sauvignon thrives in narrow rows. Hand-tended with low yields, the vines grow on loamy topsoil over a clay base, sloping north-south from the vineyard's highest point. The fruit, carefully nurtured, was harvested on April 5th, reflecting the vineyard's commitment to quality and attention to detail.
Destemmed then crushed to an open fermenter, cold soaked for 48 hours left on skins for 10 days until the desired colour, tannin and flavour profile was obtained. Post pressing, wine complemented fermentation in barrel, approximately 23% new French oak barriques and remaining 1-3 year old. After 14 months of maturation, the wine was barrel selected and blended to ensure a wine of balanced oak and varietal Cabernet Sauvignon characters was achieved. This wine was bottled in October 2023.
