WINEMAKING
Harvested in the cool hours of early morning and gently crushed/pressed at the winery upon receival, the juice was settled and racked to tank with a high percentage of solids
before being transferred to French oak barriques for wild fermentation. Post-fermentation, each barrel was stirred regularly to build flavour and texture. MLF was not encouraged. After approximately 10 months of maturation, only the best barrels of the batch were selected by taste and blended to create the final wine.
