This vibrant Sauvignon Blanc bursts with lifted aromatics, tropical fruit, fresh herbs, passionfruit, gooseberry and zesty lime. The palate is lively and bright, delivering ripe citrus and juicy stone fruit characters, finishing crisp and dry with a lovely mineral edge.
This wine is a true expression of Wairarapa Sauvignon Blanc, where the region’s cool, dry climate and free-draining soils provide ideal conditions for the variety. Fruit is carefully chosen vineyards throughout the valley offers a diverse range of flavours to craft the final blend. With thoughtful vineyard care and naturally low yields, we harvest intensely flavoured, ripe fruit that gives this wine its vibrant character.
Once in the winery, the fruit is gently pressed and the juice clarified before undergoing cool fermentation using a mix of yeast strains to build aromatic complexity and textural interest. The wine is fermented dry, then aged briefly on light lees to add depth and minerality before blending and bottling.
