Grapes were fermented for 15 days in stainless steel tanks with daily pumping over. Wine was aged for 12

100% Tempranillo grown in Elciego on 25 year old south-facing vines grown in chalky-clay soil.
Grapes were fermented for 15 days in stainless steel tanks with daily pumping over. Wine was aged for 12 months in oak barrels (60% American and 40% French) plus 12 months in the bottle.
Food Pairing: Tapas, cured ham (‘jamón’) and Iberian cold meats. Pasta recipes and meat rices. Demi-cured cheeses. Roasted lamb. Burgers and barbecued meats.
