This Zanmai "Hybrid Splash" petty has a unique and sophisticated 33 layers Damascus patterned cladding. The thin spine and beautiful thin grind combined with VG10 core steel, gives the knife laser-like cutting performance. The unique hexagonal pakkawood handle with nickel silver kuchiwa showcases Zanmai's refined production qualities - a result of merging Seki's blade making tradition with innovative technologies. The signature Zanmai fit and finish can be seen all over this knife, from beautiful mother of pearl inlay to the finely polished spine and choil. The core steel is mirror polished, and the damascus pattern on jigane is more elaborate compared with Zanmai's other damascus series, with light etching to enhance the contrast of the pattern.

    Mcusta Zanmai is based in Seki City of Japan, a town with over 800 years of swordsmithing history. While embracing Seki's blade making traditions, Zanmai is also bringing innovative technologies such as CNC machine and laser cutting into the workshop, making the brand a rare and seamless integration of craftsman traditions and modern technologies. Zanmai knives have unique handles that not only pay homage to traditional Wa handle design, but also brining innovations such as high temperature compressed layers of natural Pakkawood to create polished and strong handles. Zanmai's laser cutting of VG10 steel produces high precision finish on monosteel blades. Mcusta craftsmen finish each knife on Japanese Waterstones to give their knives refined looks.

    Care:

    Wash and dry with a soft sponge, and safely store after use. Avoid cutting into bones, frozen foods, hard fruit pits.

    Cutting Surface:

    Wood, rubberized boards and high-end composites, and quality plastics such as polyethylene make acceptable cutting surfaces, and will help protect and prolong knife’s edge. AVOID glass, metal, countertops, and other rigid, non-forgiving surfaces.

    Sharpening:

    We recommend sharpening all quality Japanese knives on whetstones, as we believe they yield the best results for your knives.

    Mostly Great, But With One Problem
    Size: 3 kg - Normal Size
    Overall, this is a good scale and I do like it. However, it has one flaw that I'll mention later. First, the things I like. This is a nice looking scale. I like the design and the different colored displays for time and weights. The stainless steel on black is a classic look and very stylish in my opinion. The size is just right for brewing with French press or Chemex style brewers. It has a lot of plastic, but that is how all scales of this size are, especially in this price range. Having the ratio displayed is really nice. I use that about as much as looking at the grams during a pour over. I've also been using the automatic timing feature. I didn't think I'd like that, but it is actually quite useful. I've been using it for a month off of the first charge so I think that the battery life is good. Its also nice to be able to turn off the sound so I don't have to listen to beeping early in the morning when the rest of the family is sleeping. Being able to change the units of measure is great. I've weighed coffee, baking ingredients and even small packages prior to mailing them. It handles anything under 6 lbs. The display is sensitive and reads quickly. Which leads me to the one negative about this thing. When it is weighing room temperature items like beans or an empty brewer, its accurate and gives a steady reading. However, when you start introducing hot items (like brewing coffee which is what this is for) it starts to drop weight by 0.1g every 10 to 20 seconds. Even with the included silicone cover. I've added a cork trivet and another silicone pad under the brewer which didn't seem to help much. Eventually they warm up and the issue starts. Any raise in temp causes the unit to start lowering the weight as previously described. That's why I only gave it four stars. While this is annoying to see, it doesn't seem to mess with the overall brewing ratio or mess up my coffee brewing at all. By the time its doing this, I've usually made my pours and am in the 4 to 5 minute steeping period prior to finishing and decanting. At that point, I'm really only using the timer function anyway. Therefore, I didn't give it a lower rating since I like everything else about it and its not very expensive. All things considered, I think its a good value for the money and gets the job done.
