風之森美味的秘訣②、有極小的氣泡的一種特殊的水、「Ultra Fine Buble」水來洗米、把米裡面的多餘過礦物質或蛋白質除去、就算精米步合80％的低精米也一樣優雅柔和、造出層次多變帶點複雑充滿立體感的酒。
