Über die Caroni Distillery noch etwas zu schreiben, wäre überflüssig – ihr Legendenstatus ist unübertroffen. Steffen Mayer hat in seinem Monumentalwerk „Caroni 100% Trinidad Rum“ alle Geheimnisse und Wissenswertes über diese verlorene Destillerie zusammengetragen.  Gleich nach dem Einschenken entfalten sich die typischen Caroni-Noten im Glas, ohne eine beißende Alkoholnote. Es dominieren fruchtige Aromen, etwas Rauch, Teer, feine Süße, getrocknete Aprikosen und Banane. Nachdem der Rum einige Zeit im Glas ruhen durfte, werden die ohnehin intensiven Aromen noch stärker, besonders Teer und Rauch treten deutlicher hervor. Der Geschmack ist kraftvoll und präsent. Die Aromen spiegeln sich im Geschmack wider, ergänzt durch feine Karamell- und Holztöne.  Der Nachklang ist extrem langanhaltend und hinterlässt einen bleibenden Eindruck.
