While creamier in texture than your “typical” dark orange sweet potato, it is very sweet with a delicious flavor. Sunshine is a good multi-purpose sweet potato, great for baking, chopping and roasting, frying, and even pies. While perhaps not a true bush-type, its vines are more compact than any other variety I’ve grown, making them a little more manageable in smaller spaces. The leaves are a “cut-leaf” type as opposed to the standard, heart-shaped type.
