Winemaker Stephen Cook focuses exclusively on Barossa Valley Shiraz, sourcing premium fruit from the renowned western ranges, an area known for producing bold, full-bodied wines with remarkable depth and aging potential. Each wine is made in small batches, individually numbered, and crafted to highlight the unique characteristics of the Valley’s diverse sub-regions.
The grapes for the Hoffmann DV (Dimchurch Vineyard) single vineyard wine are sourced from the renowned Dallwitz Block, which was largely planted between 1888 and 1912, and more specifically rows 25-30 of the “younger” 70+ year old vines. Depending on the vintage conditions generally between 800 and 2,400 bottles are produced.
The grapes were fermented in small batches and after fermentation was matured in 50% new French oak for 20 months prior to bottling. Minimal intervention is used in the winemaking process and the wine is moved the minimal times prior to bottling and is not cold stabilised or filtered.
Bold savory fruit with ripe berry richness, intertwined with a touch of spicy oak. It offers a luxurious concentration of fruit that coats the palate, delivering extraordinary depth and a lingering finish. With its perfectly balanced structure, it's ready to enjoy now, but will also evolve beautifully over the years.
