This Moroccan Red Lentil Soup mix makes dinner easy with a healthy and colorful soup offering the flavors of Morocco.  This delicious warming soup featuring roasted red bell peppers, tomatoes, shallots, carrots and red lentils.  Moroccan red lentil soup has mild to moderate heat, to cool it down add yogurt. 

This soup mix makes 10 hearty servings in about 35 minutes. Simply chop one onion, brown in a little butter or olive oil, add chopped garlic, lentils (good idea to rinse first) and water or broth. Bring to boil then simmer for 30 minutes. Puree for a creamy texture or not for a chunkier texture. Leftovers freeze beautifully.
