Giallo paglierino intenso alla vista. Al naso le note floreali di acacia e biancospino sono seguite da sentori di pera e pesca, con sfumature di miele e di idrocarburi a completare il quadro. La bevuta è di buon equilibrio, morbida, calda e di lunga persistenza.

Un bianco che ci racconta al calice tutta l’essenza e la peculiarità del territorio da cui ci arriva: è il Colli Tortonesi Timorasso Derthona DOC della cantina Borgogno. Un sorso figlio di una fermentazione spontanea in acciaio con macerazione di tre giorni, seguito da 10 mesi di riposo sulle fecce fini e da altri sette mesi di affinamento in bottiglia. È un Timorasso buonissimo sin da subito, ma che saprà regalare soddisfazioni garantite se dimenticato per qualche altro anno in cantina.

Ideale insieme alla cucina a base di pesce, è perfetto per accompagnare il polpo alla gallenga.
