That most venerable of vines, Cabernet Sauvignon, gets pampered in the Willunga foothills. Utopic climate collides with rich, heavy soils that erode from on high, leaving nutrient dense clays that hold water in abundance. The resulting wine is opulent and elegant, a deep garnet tapestry of tannin and dark chocolate. What we imagine they passed around at the Last Supper once the blood of Christ was all poured out.
