Following fermentation to roughly 11% alcohol the wine is fortified to 15.5% alcohol where it then enters the Elegante Fino solera. The humidity and cool temperature in the cellars then allow a layer of flor yeast to form on the surface of the wine, creating the wine's distinctive aroma and character. The wine remains in barrel for a minimum of 3 years as part of the traditional Solera system. Elegante fino is pale golden in colour, crisp and dry on the palate, and features floral pear aromas with a subtle refreshing finish.
