Designed specifically for sashimi and sushi, the Yoshihiro VG-10 Yanagi knife features a single-edged blade that effortlessly slices through fish skin and flesh without compromising taste or quality. Unlike other knives, it preserves the integrity of the fish, leaving it smooth, shiny, and fresh. This high-quality knife is layered with softer steel over a hard VG-10 core, allowing for superior sharpness and durability.
Handcrafted using traditional techniques, the VG-10 Semi-Stainless Steel Mirror Finished Yanagi features a flat ground front (shinogi) and a concave ground back (urasuki), delivering a thin, sharp cutting edge. The Ebony wood handle with triple sterling silver rings ensures a lightweight and well-balanced feel, complemented by a double water buffalo horn bolster and a lacquered magnolia wood saya for easy maintenance.
Care & Sharpening: For optimal performance, sharpen using only water whetstones. Hand wash and dry immediately to maintain the knife's quality.
