We lieten ons inspireren door de lambics die meer dan een eeuw geleden werden gebrouwen om een gueuze te maken ter ere van het 125-jarig jubileum van Brasserie Cantillon. Destijds was het gebruikelijk dat brouwers meer ongeraffineerde tarwe in hun brouwsels gebruikten dan de 35% die we tegenwoordig gebruiken. Deze Gueuze 125 is een blend van lambic gebrouwen op 27-12-2017 met 50% ongeraffineerde tarwe en 50% gemoute gerst en gebotteld op 10-12-2021. Bij voorkeur te consumeren binnen 20 jaar na de botteldatum.
125 jaar geleden hadden flessen geen etiketten zoals nu; lambicbrouwers markeerden hun gueuzeflessen in plaats daarvan met een dikke witte krijtstreep. Deze markeringen dienden ook om aan te geven hoe de flessen tijdens de hergisting en rijping in de brouwerij waren geplaatst, en in welke positie ze teruggeplaatst moesten worden zodra ze in de kelder van een bar of café aankwamen.

In plaats van een traditioneel etiket te ontwerpen voor onze Gueuze 125, hebben we ervoor gekozen om ons verleden te eren door elke fles met de hand te beschilderen met een witte verfstreep.
