Op de noordelijke hoogten van Santenay vinden we de Terrasses de Bievaux. In 1986 gaat de grootvader van Justin wijnstokken planten op deze steile heuvel. Een zeldzame plek in Bourgondië. De heuvel is terrasvormig en verdeeld in zes kleine percelen. Het terroir is perfect voor de Chardonnay. De grond is dun en bedekt met mergel van kalksteen; de bossen in de buurt geven een verfrissend microklimaat. Omdat het terrasvormig is, is het effect op het zuidwesten sterker en geeft het structuur en concentratie aan de wijn. De heuvel af is het kleiiger en geschikt voor de rode wijnen op een dorps AOC. Kortom, het is de perfecte harmonie tussen de minerale frisheid van de grond en de krachtige aroma's die door de ligging worden gegeven; met volume in de mond.

Chardonnay druiven van de mooie vallei Blanc Les Terrasses de Bievaux

Het familiebedrijf Girardin werd in 1570 opgericht en inmiddels is de 13 generatie aan het roer. Het wijnhuis bezit 17 hectare wijngaarden, waarvan het overgrote deel in Santenay te vinden is. Het doel is om met gezond land gezonde druiven te telen. Bievaux betekent mooie vallei en de wijngaard werd in de jaren 60 aangeplant en daarna volledig herplant in 1970 en 1986. De wijnstokken zijn 35 jaar oud en de druiven worden volledig met de hand geplukt. Zodra de druiven in de wijnmakerij aankomen worden ze direct geperst. De gisting vindt plaats in roestvrijstalen tanks bij een gecontroleerde temperatuur van 10 graden. Hierbij wordt alleen gebruik gemaakt van natuurlijke gisten. De wijn rijpt 12 maanden in vaten van Frans eikenhout waarvan 15 procent nieuw is. De wijn rijpt op zijn eigen gistcellen, zodat er extra romigheid en complexiteit in de wijn terugkomt.

In de neus word je verrast door de aroma’s van sinaasappelschil, citroenschil, perzik, abrikozen, appel en witte bloemen. Fruitig met tonen van bloemen in de smaak. Heerlijk romig dankzij de houtopvoeding. Lekker fris en daarom heerlijk bij coquilles.

Not that great
Huge "The Simpsons" fan. I watched all the episodes and read a lot of the comics and enjoy most. This one however was quite boring. Turns out I'm just not a big fan of Chief Wiggum. I really enjoyed The "Homer" and "Bart" book. But not this one. Maybe if you love Wiggum you'll love it. If you're not too fond of him then I wouldn't buy it.

Great story and illustrations!
I purchased this book as a Christmas present for my toddler nephew and it became his favorite new book of the year! I had read the story randomly in a store some years ago as the title, awards, and cover illustration caught my eye. Growing up as a 90s kid, I cannot recall being exposed to a variety of diverse books especially ones that take place in the city and Last Stop on Market Street stuck with me. It depicts the city life well, how for some the only transportation is the bus, and the value of community by giving your time to help and connect with others. The illustrations are beautifully done and the story captures both CJ's imaginations and observations wells. My brother especially loved how wise CJ's grandmother is as she guides him during their journey and teaches him at a young age how to help those in need.
