De wijn rijpt in alle rust in de kelders van Georg en Philip zodat ze hun eigen, elegante structuur ontwikkelen. Deze Bourgognes zijn geen zoetige fruitbommen, maar hebben een aanwezige maar goed gentegreerde zuurgraad. Ze zijn lange tijd spontaan op de lies (neergeslagen gistcellen)

De wijn rijpt in alle rust in de kelders van Georg en Philip zodat ze hun eigen, elegante structuur ontwikkelen. Deze ‘Bourgognes’ zijn geen zoetige fruitbommen, maar hebben een aanwezige maar goed geïntegreerde zuurgraad. Ze zijn lange tijd spontaan op de lies (neergeslagen gistcellen) gefermenteerd en gerijpt in vaten van 500 liter of in barrique vaten met een lichte toast (branding). Helder, robijnrood van kleur. In de neus aroma’s van zwarte kersen, frambozen, rozenblaadjes en wilde kruiden. In de smaak tonen van rijp klein rood-zwart fruit en licht hout.
