Vrij makkelijk, als je stage kan lopen bij een van de beste wijnmakers uit het land namelijk Telmo Rodriguez dan sla je dat uiteraard niet af! Hier heeft Olivier enorm veel geleerd en is begonnen te bouwen aan zijn eigen wijnhuis wat inmiddels al zon  11 hectare beslaat. Onder andere tijdens zijn werkzaamheden bij het befaamde Domaine Leroy heeft Olivier geleerd zijn wijnen naar stijl van het perceel te maken zoals het ook werkt in de Bourgogne. De witte wijnen zijn lekker bourgondisch en rijp de rode wijnen karaktervol met veel fruit, precisie, spanning en een grote complexiteit.

Mirando al Sur is een selectie van Viura met 10% Malvazia en Grenache Blanc uit Rioja Alavesa. Afkomstig van zeer oude wijnstokken van twee unieke terroirs. Vergist en gerijpt voor 6-7 maanden op Foudre en waarna ze nog voor 24 maanden rijpen op oude Sherry buds (amontillado en fino). Een indrukwekkende wijn krachtig, romig en zilt licht smokey met veel power nu al heerlijk drinkbaar maar kan fantastisch rijpen. Wellicht één van de allerbeste witte wijnen uit Spanje!
