Deze Syrah Apice heeft een mooie robijnrode kleur. In de neus biedt hij pittige aroma's van rood fruit, pruimen, kersen en aromatische mediterrane kruiden en balsamico. In de mond is hij krachtig rijk en intens met zachte tannines die worden ondersteund door een goede frisheid. Het resultaat is een bloemen gedreven fruitige wijn met een sterke structuur maar ook veel rijp sap om er een traktatie van te maken. Deze wijn heeft een indrukwekkend open en vriendelijk karakter met een complexe aanhoudende afdronk.
De Apice komt van druiven die "op de top" van de 'Canonici wijngaard zijn gerijpt. Twee en een half jaar op fles gerijpt, wordt Apice alleen geproduceerd in vintage jaren die Stefano als uitzonderlijk beschouwd, en daarom vertegenwoordigt deze wijn hun "familiezilver".
