Sourced from the cool, maritime climate of Monterey County, where morning fog and coastal breezes moderate daytime temperatures, this Chardonnay is night-harvested and rushed cold to the winery in the early hours. The grapes move directly to press and cold settle for 48 hours before being racked into small French oak barrels for fermentation. Following primary fermentation, the wine undergoes malolactic conversion in barrel, with weekly lees stirring to develop richness and mouthfeel. The resulting wine offers inviting aromas of golden apple and lemon peel, complemented by sweet vanilla and spice notes. A rich, creamy texture balances perfectly with refreshing acidity, leading to a lingering finish. This elegant Chardonnay pairs beautifully with grilled seafood or sage-butter chicken.
