Te Mata Estate meticulously cultivates its vines across four sub-regions, each contributing unique characteristics to the final wines. Te Mata Estate s Cape Crest 2020 is a remarkable expression of New Zealand Sauvignon Blanc, with a unique blend of 85% Sauvignon Blanc, 9% Semillon, and 6% Sauvignon Gris. The grapes were hand-harvested from individual plots within Te Mata Estate s vineyards in the Bridge Pa Triangle sub-region of Hawke s Bay between February 26 and March 5, 2020. The parcels were destemmed, lightly crushed, and briefly skin-contacted before pressing and cold-settling. The wines were then fermented in a mixture of new and seasoned French oak barrels and aged on lees with regular stirring for 11 months. The resulting wine is palest lemon and brilliant in the glass, offering luscious citrus and succulent stone fruit flavors that glide effortlessly towards a precise and lingering finish of gooseberry, lime, and sea salt. The ripe and pure fruit on the palate is complemented by crunchy acidity and complexing grace-notes of dill, coriander, beeswax, and woodsmoke.
